How To Make Kimchi, Spam, And Egg Scramble

Kimchi spam and egg scramble will be your new favourite when it comes to a simple comforting meal! It’s a very interesting combination that we can’t wait to share with you! 

This dish is very creative and easy to make! Thinking of when to have it? It is filling enough for breakfast, lunch or dinner! Perfect for a busy weeknight meal or a hearty weekend brunch! 

Fun fact: it is very commonly made in Korea as a comfort food and Koreans eat this for breakfast.

KIMCHI, SPAM, AND EGG SCRAMBLE (FOR 2 SERVING)

INGREDIENTS:

  • 1/2 cup Spam, diced
  • 3 large eggs
  • 1/4 JIN Kimchi 
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 cups white rice (steamed)
  • Kosher salt (optional)
  • Seaweed seasoning (optional)

 

INSTRUCTIONS:

Dice Spam into small cubes. Crack 3 - 4 eggs into a small bowl and beat to combine.

Heat olive oil in a medium nonstick frying pan over medium-high heat. Add spam and cook until golden brown and crispy, stirring often for about 3 - 4 minutes. 

Reduce the heat to medium-low and add JIN kimchi. Cook until fragrant for about 2 - 3 minutes. 

Push mixture of spam and kimchi to one side of the pan and melt butter on empty side. Add eggs and stir frequently until scrambled to your desired doneness. 

Stir kimchi and spam until well combined. Enjoy with a bowl of rice and topped on some seaweed!
