Ashley's MUST TRY Kimchi Cheese Toast!

If you have slightly fermented Kimchi lying around you're good to go! The recipe is so easy and fuss free to make (you probably already have the rest of the ingredients at home)!
Writing this blog is making me hungry, so let's get started! Â
INGREDIENTS (1 Serving)
- 1 Cup Mozzarella Cheese (âď¸important)
- 1Â Cup JIN Kimchi
- 2 Slice of White Bread (Loaf/ Artisan)
- 1 Tablespoon Salted Butter
- Some Oil
INSTRUCTIONS:
Step 1: Stir-Fry the Kimchi
Add some oil into a heated pan and lightly stir-fry your JIN Kimchi. We do this to warm the kimchi and give it a smoky char flavour. Doing so will also help concentrate the flavour of the Kimchi. Once done, set the Kimchi aside in a bowl.
If you're not using chopped Kimchi like JIN Kimchi, we recommend chopping the Kimchi into bite-sized chunks.Â
Step 2:Â Butter the Bread
Spread a thin layer salted butter on both sides of each slice of bread.Â
You can use margarine and white bread instead of butter and brioche bread if you'd like. Do be careful if you're using margarine as it can get a little salty. If you're not a fan of salty food, you may even choose to use unsalted butter for this recipe!
Step 3: Grill the sandwich
Heat pan on low heat and add some butter to grease it up. Place 1 slice in the pan and add 1/2 cup of mozzarella cheese. Next, add the Kimchi we stir-fried previously. Top it off with the remaining 1/2 cup of mozzarella cheese. Finally add the last slice of bread.
Use a spatula to press down the sandwich and cover the pan with a lid for 1-2 minutes. Just so the cheese in the center melts. We want the heat to melt the cheese but not burn the crust of the bread.Â
Flip the sandwich over and let it simmer again for another 1-2minutes. You'll notice that the bread has a nice brown char on it.

The Secret to that perfect Grilled Kimchi Cheese Toast!
The trick to getting that nice cheese pull is to use Mozzarella Cheese! Cheddar, Sharp Cheddar and Gouda won't give you that satisfying stretch. Also, because JIN Kimchi is savoury and already seasoned, we recommend choosing a mild cheese that will compliment the flavour of the kimchi.
This recipe is so versatile and forgiving we even a beginner cook will ace it in no time! We highly recommend trying out this recipe! You may even choose to change up the recipe with our JIN "Spicy Cabbage" Kimchi or even JIN "Spring Onion" Kimchi!Â
