How to make Kimchi Spam Kimbap (김치 스팸 김밥)

Kimbap (김밥) is a deliciously popular on-the-go food commonly eaten in Korean culture! From grabbing a quick breakfast, to a packed lunch or even as an afternoon snack, kimbap is a tasty dish that people of all ages can enjoy!

This quick and easy dish is a delicious combination of flavours and we highly recommend you to try out this simple recipe!

All you’ll need is a few ingredients that you most likely already have in the kitchen, and of course some JIN Kimchi!

We recommend using a less-fermented Kimchi when you're making this Kimbap, as to not overpower the flavours of the other ingredients and hence, giving that delicious balanced flavour Kimbap should have.

This quick recipe can easily be completed in under 20 mins!

Let’s get started!

INGREDIENTS (makes about 2 rolls) :

  • 2 sheets of Dried Seaweed
  • 1 bowl of Sushi Rice
  • 2 Eggs
  • 1/4 can Spam
  • 1/2 cup of chopped JIN Kimchi (or as much as you like)
  • 2 tablespoons of Cooking Oil
  • Gochujang, Salt & Sesame Oil for seasoning (optional)

Total prep time: 15 mins

Total cook time: 5 mins

INSTRUCTIONS:

Step 1. In a bowl, mix cooked sushi rice with some salt and sesame oil to your liking.

Step 2. Crack your 2 eggs into a bowl and lightly beat until mixed well. Pour the egg mixture evenly into the pan and cook on medium heat for about 20 seconds. Fold the cooked egg in half and flatten. Transfer to a chopping board and slice into 1 inch pieces. Set aside to cool.

Step 3. Thinly slice Spam into strips and lightly pan fry on medium heat. Set aside to cool.

Step 4. Cut some JIN Kimchi and add some gochujang for extra flavour.

Step 5. Spread rice evenly on a sheet of seaweed. Do this on a bamboo mat if you have one.

Step 6. Add some egg, spam and kimchi onto the rice and tightly roll your kimbap. Dab some water or sesame oil on the edge to seal it all in!

Here’s a tip: Feel free to add any extra ingredients to suit your taste! Traditionally Koreans add lots of vegetables, such as cucumber, spinach, carrots, and pickled radishes, making this dish healthy and full of nutrients!

Step 7. Lastly, spread some sesame oil on the surface of the roll and cut into slices. Sprinkle some sesame seeds (optional) and 완성, you’re done!
